Why Single Servings?

I started this blog when I was diagnosed with anemia and malnutrition to focus on getting the nutrients I need. I began logging everything at NutriMirror and found blogging the recipes helped keep me motivated. As a diabetic, I also limit carbs, even though I love them. Limit – not eliminate.

Here are the things I care about when planning meals.

  • I want to manage my glucose levels because I am diabetic. There won’t be many desserts.
  • My cholesterol is extremely low, so I don’t avoid cholesterol.
  • Even though my anemia has improved thanks to deliberate food planning, I am still paying attention to keep my iron up.
