I cannot believe the years I wasted afraid to try mushrooms. I ate a canned cocktail mushroom as a child and was convinced that mushrooms were the second most disgusting food in the world. I might never have discovered what I was missing if not for a sneaky mushroom on a pizza when I was in college. This lunch main entree is nothing but sauteed mushrooms though full of bacony goodness.
I chopped up two slices of pepper bacon. One thing to remember about cooking with pepper bacon is that you probably will not need to add pepper or salt to the food since you will likely get plenty in the bacon. I started the pepper bacon frying on a medium heat skillet. I sliced up the mushrooms and cooked them with the bacon pieces which had already given plenty of cooking grease. When they were done, I tossed the juice of one fresh squeezed lemon on and let them simmer just a minute more and then served them with the braised red cabbage and cucumber salads I had made the other day.
