Potato Pancakes

Grate one medium potato (scrubbed with peel on) with one egg, two teaspoons of flour and a dash of salt and pepper. Heat skillet on medium heat. It’s ready when you flick water on it and they water sizzles and bounces. Pour half the batter on the skillet and using a spatula, spread the batter into a circle. Cook on one side until all the batter has lost the wet, glossy look. Flip and cook on the other side. Makes two pancakes. Serve with a pat of butter. Some folks like sour cream and some even like maple syrup.
